Riesling
PRODUCTION NOTES: Riesling dominates the Michigan wine landscape because it highlights what we can do best—grow and produce aromatic white wines. We made this wine in a style that highlights one of Riesling’s greatest strengths—the ability of its acid to give the wine structure and balance against sugar. The fruit was harvested late in the season and fermented until we had the right amount of sugar left to counter the acidity and give it an off-dry presentation. It spent the next few months on light lees until it came time to bottle.
WINEMAKER TASTING NOTES: This wine still holds its structure as the viscosity of age begins to dominate. The notes of petrol are beginning to lay over the once more pronounced lime and white peach flavors. The wine still has structural integrity thanks to the natural vibrant acidity Riesling is known for. An example of a wine that needs to be revisited annually to see what progression it has made.
PRODUCTION: Fermentation halted with residual sugar to balance the acidity. Aged on light lees for 5 months in stainless steel.
